Im no techy guy but it seems the longer the server is up and the more people join the laggy it gets however its great after a fresh restart. Why not add more restart intervals say like every 8 hours?

For the moment there is an issue behind the scenes that the team are working on, Its best not to change anything for now while resource usage is monitored.
I am sure they will revisit this in the future if performance is still poor once fixes have been made.

We are quite regularly restarting the servers manually and closely monitoring the servers. (see the linked suggestions for full details and reasoning).
We might add an extra restart somewhere in the early morning but keep in mind that adding that will also make it harder for us to find the issue.
